Thóg Maurice Bacach Fitzgerald, larla Dheasmhumhan Caisleán Deasmhumhan c. 1500. Sampla maith de theach túir uirbeach, is éard atá sa chaisleán ná daingean le tithe stórais ar cúl agus oifigí tí ar an gcéad agus ar an dara hurlár. Tógadh ar dtús é mar Theach Chustaim Chionn tSáile ach ghníomhaigh sé freisin mar stóras ordanais, mar phriosún agus mar theach na mbocht le linn and Ghorta Mhóir. I 1601 le linn chaith Choinn tSáile, bhain fórsaí na Spáinne faoi Don Juan Del Aguila úsáid as Caisleán Deasmhumhan. Fógraíodh ina Shéadchomhartha Náisiúnta é i 1938.
Inniu is i gCaisleán Deasmhumhan atá larsmalann Idirnáisiunta na Fíona lonnaithe. Léiríonn an taispeántas seo scéal na gceangal fíona atá idir éire agus an chuid eile den domhan.

Desmond Castle was built by Maurice Bacach Fitzgerald,

the Earl of Desmond, c. 1500. A good example of an urban tower house, the castle consists of a keep with storehouses to the rear and domestic offices on the first and second floors. Originally built as the Kinsale Custom House, it has also served as an ordnance store, prison, and during the Great Irish Famine, as a workhouse. In 1601, during the Battle of Kinsale, Desmond Castle was used by the Spanish forces under Don Juan Del Aguila.
It was declared a National Monument in 1938. Today Desmond Castle is host to the International Museum of Wine. This exhibition documents the intriguing story of Ireland's wine links with Europe and the wider world.
